3 Cheese Chicken Roll-Ups

I absolute love a tasty chicken dish. My fiancé however, is not a huge fan of chicken. I made this recipe and he raved about it. You can eat it as is, or on top of spaghetti. I’ve been loving the Banza chickpea pasta, and my fiancé has no idea its not regular spaghetti so its a total win!


This recipe is originally from Tasty, but you can modify all you want!


⋆ 2 chicken breast- sliced in half and beaten flat

⋆ 2 cups spinach

⋆ 1/2 cup ricotta cheese

⋆ 2 cloves garlic

⋆ 1/4 cup parmesan cheese

⋆ 2 eggs- beaten

⋆ 1 cup Italian seasoned bread crumbs (I use panko too)

⋆ 1 cup marina sauce

⋆ 1 cup shredded mozzarella cheese (you can use whole slices but it'd too much for me)

⋆ Fresh basil, chopped

⋆ Salt and pepper to taste



-Preheat oven to 450°

- Sauté garlic and spinach in olive oil until spinach wilts. Add in ricotta, parmesan, salt and pepper and stir until heated and melted.

- Beat the halfed chicken breasts until flat.

- Take the spinach and ricotta cheese mixture and dollop in the middle of the flattened chicken. Roll em up!

- In two separate bowls, beat the eggs and put the bread crumbs in another bowl. Dip each chicken roll up in the egg, then the breadcrumbs. Place in 8x8 or 9x9 baking dish seam side down.

- Bake for 25 - 30 mins

- Remove from oven and spread the marinara sauce and mozzarella cheese on top. Bake for another 5 mins.

- Remove from oven and top with fresh basil.
