Summer Pasta

Oh summertime. who doesn't love the warm weather? It's getting warmer in CT and this recipe is my easy throw together dinner. Tonight happens to be chilly and windy, but hey, a girl can dream.


Side note: Banza pasta is the shit, plain and simple. For all my clean eating friends, this is the closest to actual pasta I have had by far.


You'll need:

1 pint of grape tomatoes, sliced

1 tbsp of garlic

1/2 cup extra virgin olive oil

1 package Banza spaghetti

1/2 lemon, juiced

fresh basil chopped

salt + pepper

Italian seasoning, to taste


-Cook pasta according to directions, set aside.

In a large pan, heat olive oil on high heat. Lower temp to medium after about a minute. Sauté tomatoes about 5 minutes on medium heat. Add in garlic and let sauté together until soft.

-Add in lemon juice and seasonings. Let cook a few more minutes, then add in fresh basil at the very end.

-Throw in with the pasta and toss together.
