One Pan Cheesy Kielbasa and Pasta

I work full time as a loan underwriter for a bank. While I envy the people who can make their blog their full time gig, it is 100% not in my future. Don't get me wrong, it sounds like a blast, but I am what they call it... ADHD. I'm a complete basket case with the energy of a 3 year old. I need to get out and do my thing- possibly having an afternoon crash and maybe a nap. If I sit too long, legit I feel like I could run a marathon with the restless legs I've got. It's actually kind of hilarious.
My every day job has been pretty stressful lately, so I rely on easy, healthy throw together meals. I don't know how many recipes I've legit thrown together and said "holy shit, that's actually pretty good!" This is one of them.
It's a go-to when either I know I'm working late, or to be honest, I'm being a lazy fuck. Whether you're a full-time mom/dad or full time employee, this dinner is seriously the easiest for those who want simple, healthy, and a little spice in their dish!
You'll need:
1 package kielbasa, sliced
1 can Rotel tomatoes
1/2 cup onion, diced
1 tbsp garlic
2 cups chicken broth
1 box ziti (again, Banza pasta is amazziinggg)
2 handfuls spinach or kale
1 cup cheddar jack cheese
1 tbsp olive oil
1/2 tsp Italian seasoning
2 stalks green onions, sliced
salt + pepper to taste
(be sure to use a deep cooking skillet with a top)
- Pour olive oil in your cooking skillet and set to high heat so its super hot. Turn the heat to medium and add the sliced kielbasa and cook on either side until brown. Add in your onions and garlic and cook until onions are translucent. Add seasonings.
- Pour in your can of Rotel tomatoes being sure to get anything burnt off the bottom of the pan. Let simmer for about a minute. Then add in your chicken broth and bring to a boil.
- Throw in your pasta being sure that the liquid is covering (if it doesn't it's fine too, it'll cook thru). Put on the top and turn heat to medium low and cook for 15 mins stirring occasionally.
- Toss in your greens (kale or spinach) and let cook until completely wilted (about 5 mins)
- Top with the cheddar jack cheese and place top back on until melted, about 2 mins.
- Toss on the green onions and it's good to serve!
