Blueberry Oat Bread

HAPPY SUNDAY!
On Sunday’s you can find me baking or being lazy on the couch watching murder shows for hours and hours. Theres no in-between.
This particular Sunday, I woke up with a ton of energy and craving something sweet and indulgent. Making bread is one of my fav baked good. It’s so simple but you can add whatever you’re feeling at the time. As with all my recipes, you can sub anything and everything. Walnuts for almonds, vanilla extract for almond extract (which is my favorite for blueberry recipes), almond flour for bleached.
Create whatever YOU want. It’d a damn good feeling!
- ½ cup brown sugar
- 2 eggs
- ½ cup sour cream
- ¾ cup milk
- 1 teaspoon vanilla
- ½ cup vegetable oil
- 2½ cups all purpose flour
- 1 cup old fashioned oats
- ¼ teaspoon salt
- 3 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 cup crushed almonds
- 1 cup blueberries
- Preheat oven to 350 degrees.
- In a large mixing bowl gently combine brown sugar, milk oil, sour cream, vanilla, and eggs.
- Add flour, oats, salt, baking powder, and cinnamon and mix slowly.
- Sprinkle a little flour on the blueberries (so they don’t sink) and fold into the batter along with the almonds.
- Pour batter into a greased loaf pan (you can add a bit of oats to the top) and bake for an hour or until a toothpick come out clean.
- Cool in pan for 10 mins then transfer to cooling rack for about 2 hours.
- Top with confectionary sugar if your feeling super indulgent and dig in!
