Dark Chocolate + Caramel Granola Bars

OHHHHH my love for all things granola. You can legit dress it up with whatever you want. I decided the other night to make my own granola bars. You look at the label at the grocery store sometimes and the amount of sugar in those bad boys is awful! Why not make a healthy, but delicious alternative that is easy to throw together?!


These are healthy-ishhh. You can always swap one binding agent, or topping for another. But these, these are stupid good.






2 cups old fashioned oats

1/3 cup honey

1/3 cup coconut sugar

1/3 cup coconut oil

1/2 cup almond flour

1/2 cup shredded coconut

1 cup almonds, shredded

1 cup dark chocolate chips

1 tsp cinnamon

1 tsp vanilla extract

1/2 cup caramel sauce


*note: if mixture seems too dry, add a little water to help mix it.


- In a medium sauce pan, melt coconut oil and honey together. Bring to a boil and add vanilla extract.

- In a large bowl, fold in oats, coconut sugar, almond flour, shredded coconut, almonds, and cinnamon. Add the coconut oil + honey mixture to dry ingredients.

- Stir until all ingredients are incorporated, then fold in dark chocolate chips.

- Line a brownie pan with parchment and press the mixture into the apn. Pack it with the back on the spoon or your hands.

- Drizzle caramel sauce over the top.

- Freeze for a little over an hour. I kept mine overnight to make sure they were really stuck.

- Cut into bars and wrap individually in parchment paper. Keeps up to a month n the freezer. Just take out to thaw when you get that craving!
