Soft Chocolate Chip Cookies

Day 3 of the plague. I never get a normal stuffy nose, sore throat...no. It literally knocks me on my ass. I normally eat stupid healthy every day so when I'm sick, I crave comfort food. Cookies of any kind are my comfort food.


I honestly just wanted one, but until I master that recipe, I have to make dozens. This recipe is sweet (from what Mark tells me) and so soft. I'm really loving baking with pudding mix.


I can only hope that when I get my sense of state and smell back, I can enjoy them fully. Until then, see for yourself!


Yields about 24 cookies


1 3/4 cup flour

1/2 cup granulated sugar

1/2 brown sugar

1 tsp baking soda

1 package of instant vanilla pudding mix

1 egg

1 1/2 sticks butter

1 tsp vanilla extract

1 cup chocolate chips

Pinch of salt


- Preheat oven to 350 degrees

- In a large bowl, sift flour, salt, and baking soda. Set aside.

- In a mixer, combine butter, sugars, and pudding mix and mix until well combined.

- Whisk in egg, and vanilla extract. Add in flour mixture until all combined. Fold in chocolate chips.

- Drop rounded balls of dough onto parchment paper lined cookie sheet leaving about 2 inches of space between each ball.

- Bake for 12-14 mins or until tops are golden brown. Remove from oven and leave on cookie sheet for a couple minutes. Then transfer to cooling rack.
