Turkey Sausage with Roasted Veg

Not gonna lie, today kicked my ass. 🤦🏼‍♀️ Some days I cannot get it together for whatever reason (PMS in my case) I had some veggies in the fridge that were on their last leg (really trying to cut down on waste) and got to roasting! This meal is perfect for the nights that you really don't want to do anything crazy, but stay on that health kick!


- turkey sausage

- veggies, sliced (peppers, zucchini, onions, broccoli, tomatoes, WHATEVS)

- extra virgin olive oil

- ground pepper

- Italian seasoning

- sea salt (I used Himalayan pink salt)

- grated parmesan cheese to top


Preheat oven to 350 degrees

Throw all the veg in a bowl and top with olive oil, salt, pepper, and any seasonings.

Bake for 15-20 mins

Serve over noodles or brown rice.
